Ingredients:

  • 200g chicken, thinly sliced
  • 100g shrimp, peeled and deveined

  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon Shaoxing wine (optional)
  • 1 cup chicken broth or water
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

  1. Soak the Yee Mee noodles in hot water for about 5 minutes until they are soft. Drain and set aside.
  2. Heat the vegetable oil in a clay pot or a deep skillet over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the chicken and shrimp to the pot and cook until they are no longer pink.
  4. Add the mixed vegetables to the pot and stir-fry for a couple of minutes until they start to soften.
  5. Add the oyster sauce, soy sauce, dark soy sauce, and Shaoxing wine (if using) to the pot. Stir well to coat the ingredients.

  8. Cover the pot and let it simmer for about 5-7 minutes until the noodles have absorbed the flavors and become tender. Stir occasionally to ensure even cooking.
  9. Once the noodles are cooked, remove the pot from the heat and garnish with chopped green onions.
